Jamaican Style Curry Shrimp

1 lb peeled and de-veined shrimp

Adobo seasoning


2 tsp Jamaican curry powder

1 tbsp green seasoning (I use Chief’s brand)

1 small onion

1/2 julienned green pepper

1/2 julienned red pepper

1 clove garlic

2 tbsp cooking oil

2 sprigs fresh thyme

2 tbsp coconut milk

1 tbsp ketchup

1 tbsp curry powder

1 scotch bonnet pepper (optional if you want a spicier meal)

1 tbsp corn starch

1 cup water

Season shrimp with adobo, pepper, 2 tsp curry powder and green seasoning. Heat cooking oil on high heat, sauté green and red peppers, onion and garlic until onion is transparent.  Add the thyme, reduce to medium high and add coconut milk, salt, ketchup and curry powder. Lower to medium heat and add shrimp until cooked pink.  Mix cornstarch and water, add to pan  and add scotch bonnet pepper.  Simmer. until shrimp are firmer and/or sauce has thickened.  Add salt and pepper for taste, discard pepper.
